Brittany Hadley, a sports nutritionist and owner of Fresh Start Meal Prep, understands the importance of both health and affordability. She shares her insights on creating delicious and nutritious meals without breaking the bank. Her company offers healthy meal plans, but the real magic happens when you cook these recipes at home.
One of Hadley's go-to recipes is a simple slow cooker gumbo. The beauty of this dish? It costs around $2 per serving! You start with a base of celery, onions, tomato sauce, and 48 oz of chicken broth. Hadley suggests buying ingredients in bulk, like a large container of chicken broth for only $6 at stores like Sam's Club, which can be used in multiple recipes.
Next, the protein. Hadley often uses a whole chicken from Sam's Club, which she transforms into various dishes. For the gumbo, she dices the chicken and adds it to the pot, along with slightly seared sausage. Seasonings and okra (if you like) complete the dish.
"For a family of four, you're looking at about $14, and you'll get 8 servings or more," Hadley explains. That's incredible value!
Hadley also shared a recipe for turkey stroganoff, a healthier and more affordable twist on the classic.
"Turkey is a leaner cut of meat, and it's more affordable," she notes.
You sauté ground turkey and onions, then add seasonings, a gravy packet, chicken broth, and cream.
"If you don't have heavy cream, use half and half, who's going to know, right?" Hadley says, highlighting a clever cost-saving tip. Half and half costs about $2, compared to $5 for heavy cream. Add mushrooms, diced cauliflower, and parmesan cheese, and you have a meal that costs about $12 for six servings. It's quick, easy, and, most importantly, delicious.
